Recipe from Epicurious:
Spinach Salad with Bacon Dressing

1 bag spinach
2 boneless skinless chicken boobs, cooked and cut up
6 slices bacon
1 onion, sliced thin
3 T balsamic vinagrette
3 T feta cheese crumbles

Wash spinach and put in bowl. Top with cooked chicken breasts (or meat from purchased roasted chicken). In skillet, cook bacon until crispy, then crumble over greens. Add onion and vinegar to bacon drippings. Cook until onions are soft, about 2 minutes. Pour dressing over salad - spinach will wilt slightly. Serves 4.

This was awesome, and very quick. If you have pre-cooked chicken, the whole process takes about 15 minutes. Score.
